I'd like to start this thread with a caveat... there are many types of Mexican food we enjoy.
Talk a bit about what you like if you can, not so much what you don't like because... somewhere down the line... we're all different. Different strokes so to speak.
I know of two different schools of Pueblo Colorado Green Chile... the Mill Stop or Romeros type of green chile... and the Mi Ranchito/Tortillera Delicias/Ritas/Arribas type green chile. I like them both, but like the latter more... as it's more like my own.
My favorite spot in all of Pueblo, just south of Adams on Polk Street, one block south of Lincoln/Thatcher;
