Well, I can't comment on Pueblo as I've never been there. Know a guy who lives there, though. I've driven through Denver and may have had a layover there once or twice. Think there's some mountains around that area, too.
As to Mexican food, I'm no expert. Hard to find decent Mexican or even Tex-Mex food in eastern Virginia. This here be crabs, fish, and Southern down home cooking. Hush puppies, grits, and collards.
I do know that I love Mexican food and remember it fondly from my days in San Diego. Your pics of the meat market bring back memories.
There are a couple of OK places around here, but the best stuff I've found is up on the Eastern Shore of the Chesapeake Bay. Lot of migrant workers there during the summer.
There are a couple of Cantina trucks that drives around from parking lot to parking lot on Rte 13, serving up every type of Mexican food you can think of out the side. Look similar to the one you have shots of.
When I was sort of in your neck of the woods... in Charlottesville, I had the best bagels ever. They didn't even need to be toasted... just right out of the oven. I miss those Blue Point Crabs or whatever that was I had when I stayed in the Beltway area.
